This certified biodynamic red wine is 70% Cabernet Sauvignon, 30% Cabernet Franc. Plaisance owns 3 hectares on the Chaume hill, facing south, and the only red grapes on the hill. The grapes are de-stemmed, with a 2-3 week maceration using indigenous yeast, then fermented and aged in concrete for 11 months.
