From the Highlands of Scotland, Blair Athol has been distilling whiskey for almost 200 years. Cloudy worts and a short fermentation time give their whiskies a nutty base, but it is the distillation that adds real weight to the distillate. A controlled level of solids coming across in the wash adds a rich, deep, malt-loaf character to the scotch. It is this character that allows it to show so well in ex-Sherry, which is exactly what the master craftsmen at Cadenhead's did...they finished the 14-year in Olorosso sherry casks for about a year which added incredible silky notes of candied ginger and orange peel with chocolate, salted caramel, and marmalade.
